I am using DVDit PE for the first time and I was wondering if anybody could tell me how long it will take to create the DVD folder. I am using a 4.7gig DVD.

Is Nero the best option to then burn the DVD folder.

it takes one hour and half to create a project in DVDit but i don't understand what you mean: i have a 4.7 gb dvd ?? a dvd5 ou dvd9 (stands for 9gb) ??

i ment the drive capacity is 4.7gig.

When I have tried to use DVDit and I have to have the video quality low or it says it is to big to fit and when I start the create the folder it stays on the firt bar for well over half an hour. Is this correct?

DVDit insists on converting the audio to PCM which is uncompressed and so takes up LOADS of space. One hour of audio is about 650 Mb. I suggest you find an authoring package that supports mp2 audio (if your DVD player will play it, some US ones don't I believe), or Ac3, as all DVD players will handle this.

...I thought DVDit PE supports AC3 (by looking at her comparison specs), I just don't know if it has her own AC3 encoder (I don't remember if it was mentioned, I would assume it does). Maybe fmb2000 has this setup to PCM...

You are right, I missed it was PE. It does support AC3 but it actually defaults to PCM, you must set it to use AC3 in the options somewhere. It only supports 2 channel AC3, not 5.1 and it does include its own encoder for converting Stereo PCM to 2 chan AC3. I gave up using it after it gave me sync problems.
