What guide should i read

Im very very new at this.
What guide do you people recom that i read if i whant to turn a DVD (9gig)to a DVDr (4.7gig) media. I want that the subtitles should be there (at least 3 of them or 2) and the chapter part the rest dosnt mather. Please give me some links to the best guide for this.
