If i rip a dvd to my hdd,but the film needs re-encoding because its bigger than 4.37gb,what bitrates should i use,but i also have to keep the DD 5.1 sound cause i want that.Say the DD 5.1 has a bitrate of 448k.Because the caculaters on this site only seem to go up 384k for the audio.
Bitrates as in .min .avg .max number of pass'.

Use FitCD (you can download it here).
You can then play with the bit rates and see how big the final file will be.
Remember to use variable bit rate and 2 pass if using tmpgenc.
What ever FitCD tells you the average bitrate should be - well thats your
average. Then set the min level to like 1500 (I tend to use 1800) and max
bit rate some level above the average to handle the high motion scenes.

for a 90min i would go something like
2 pass min3500 avg6000 max 9000
but using a bitrate calc will be yyour best bet as was suggested earlier.
