Im a newbie to all this stuff, but I have found the following way the best and easiest way to do a good dvd rip. First, it does not require ffMPEGx, because I couldnt get that program to work. Also, these are all OS X Programs. So, here it is.....
DVD to VCD or SVCD
Programs Required:
Yade Carbon
More Missing Tools
Quicktime Pro
Demux MPEG
Toast
these programs can be found at:

1.Open Yade Carbon
extract the wanted chapters to a .vob stream
2.Open the .vob in Quicktime and extract it to a quicktime movie
3.Open DemuxMPEG, and demux the .vob from YADE. Keep only the .mp2 file, get rid of all the others, including the .mp2 that is 0kb.
4.Open More Missing Tools and choose decode mp2. Give it the .mp2 file from demuxmpeg and it will be converted to a .wav file.
5.Open the new .mov and .wav files in Quicktime and copy all of the .mov.
6.Add the .mov scaled to the .wav file, and it should be in sync. Be sure to save the changes to the .wav file!
7.Export the .wav file to a Toast VCD or to Quicktime MPEG 2 File for SVCD.
8.If required, split the files into two or more cds, if not just burn the one mpeg file.

this method doesnt work for video that changes frame rates several times per chapter, possibly every vobunit.. .(i.e most animated sources...)... i've found the best way to do anything like this is outline at my site... the dv stream process. .it does not fail.. period.. i've synced the most difficult things to sync w/o a single problem

Also,
Yade Carbon has no DeCSS capability so if the DVD you are extracting from is copy protected (which 99.9% are) then it won't be able to rip it. You would need Yade classsic, DVDExtractor or OSEx
