I was wondering if you could pause or put your conversion/encoding on hold and then later on continue the conversion?

sure, just click the "stop" button. A dialog box will pop up asking you if you want to abort the encoding. Don't press anything. tmpgenc is effectivly "paused". When you are done doing what you need to do, click the "No" button,and tmpgenc will resume.
