How can I rip the music that plays while the dvd main menu is displayed?

Just like you would with any other vob. In whatever dvd ripper you use set it to file mode. The main menu and other menu's are usually stored in the vob right before the vobs where the movie is stored. So if the movie is VTS_1.1.vob-VTS_1.6.vob, then your menu would be VTS_1.0.vob.
rip this vob to your hard drive and open it in dvd2avi. Set the audio channel to channel 1 and set it to decode and make a project file. It will create a wav file of your menu.
