DVD Decrypter is as good as any for extracting audio from DVD, http://www.dvddecrypter.com/download.asp but you can also use DVD2AVI using the demux setting for the audio.

Ac3 cannot be used in a vcd or svcd and for the most part, yes both formats are limited to 2 channel sound. Svcd does support up to 7.1 channels of audio but the hardware support is so limited that almost no one can acutally use it. If your interested in this do a forum search its been discussed dozens of times but to save you some time, don't bother unless you have a Philips dvd player.

Ac3 cannot be used on an audio cd but dolby digital can. It is possible to make dolby digital 5.1 audio cds. Read here to find out how, http://www.doom9.org/BeSure.html

you can also make DTS audio cd's - several different types in fact ..

guides for that in same general location i believe -- or do a search .. DTS with 1.536mb/s bit rate is pretty impressive -- more so if you make a 20bit cd also ..

Use the first part of DVD2SVCD and let it extract the sound then cancel DVD2SVCD, as it starts encoding with Besweet.
