  1. I can rip dvd video and the 5.1 soundtrack but what is the best way to burn these to a dvd and keep the 5.1 audio and not have it converted to 2 channel. Thanks

if you want to burn to (S)VCD you can convert the audio to Dolby Surround ( BeSweet with the azid plugin)

If you are re-encoding a movie for DVD-R here is what I do...

Use TMPGEnc to de-multiplec the AC3 stream from the VOB.
Do whatever you want to the m2v file (ReMPEG or whatever)
make sure the m2v and ac3 file have the same filename (ie movie.m2v and movie.ac3)
Open the m2v file in SpruceUP...it will automatically load the ac3 file.
Create any menu's chapters etc...and burn...

If you want to keep the original menu structure you should be able to just replace the video stream in the VOB with your re-encoded one and burn that instead (I think DV Tool can do this...you can get it on the software section of doom9.org)
