I was wondering if there is a way to figure out the bitrate and quality of a satellite stream capture or VHS capture. Does virtualdub tell you the kbps of a satellite stream, if you connect the satellite to the Video In port? Will any other program do this?

Bitrate is a term associated with digital video not analog.
When you capture video from your satellite system or VCR, you are capturing an analog signal. You determine the captured bitrate of the video through your capture settings. -
Are you sure the satellite stream is an analog signal? I have DSS and I thought it was a MPEG2 digital signal.

The satellite stream is probably MPEG2 but it is converted into analog by your set top box.
There are some interesting developments at www.no-access.de where a Nokia STB can be modified to directly interface the MPEG2 stream to a PC.
