    Does anyone know of a program that will convert several AVI's into 1 mPEG1 or 2 file?

    You have to "join" the avi files and frameserve with Avisynth.
    Avisource("c:\file1.avi")+Avisource("c:\file2.avi" )+Avisource("c:\file3.avi")
    Save as *.avs and load it into your favorite MPEG encoder.
