What is an easy way to author a DVD using several video files as different chapters, displaying during playback the date each video was recorded?

You can add the date as a text watermark on the video before authoring it to DVD. I believe it's a practical way, since standard DVD players won't read or show metadata like recording timestamps. If you're comfortable with command-line tools, you can use ffmpeg to overlay it directly. If not, choose a video editor.
