Does it compress all 6 channels into 2 channels or does it just retain front left and front right while discarding the other four channels? Thanks.

You can use clever FFmpeg-GUI to downmix your 5.1 file to stereo. There are more than one options, so you are not stuck with one result you may not be pleased with. -

When mp4 or mkv file is transferred to DVD as DVD video PAL, there is an option to express the audio as 2 or 6 channels, depending on the original mp4/mkv file.
I would prefer 2 channels in the end product, but wonder if that meant losing the audio of the remaining 4 channels (for files with 6 channels). -
Try it and find out. But most down-mixers include all channels with weighting.
