I'm using VirtualDub2 to encode video with H.264, and I've noticed the conversion from YUV420P16-709-FR to YUV420-709-FR. I understand this involves reducing the bit depth from 16-bit to 8-bit. It's dehaloed, QTGMC'd, and Santiag'd DV footage.
Could anyone explain the impact this conversion might have on video quality?

Negligible impact on quality. You're starting with 8bit DV
You can do some tests and prove it to yourself
