I'm currently using a Panasonic 860, and i've noticed this clicking noise when i start capturing (before i play the tape) so on the blank AV screen, it's there, and it continues to play in the background when i play the VHS, more noticeable during quiet moments on the tape. It's very distracting.

Some kind of electrical problem or interferemce. Try connecting the VCR directly to the TV via the composite/s-video and the red and white analog audio. (Or Scart if that's all you have)
If you can still hear it, try a different set of cables.

Does the clicking sound go down when you turn the volume down?

Make sure your phone is nowhere near your VCR......been there done that.
