Both are equally destructive.

The answer is pretty obvious.
There is something seriously wrong with the HDMI workflow; I suspect it's the ER330. My HDMI captures with the Startech USB3HDCAP appear to be much better than this. This quality is what you'd get from a cheap HDMI converter.
As for not capturing 576i, this site says 576i is supported. -

This time I'm adding a cheap MS2109 HDMI stick for comparison:
- AverMedia ER330 (H265)
- MS2109 (MJPEG)
- MPEG2 from DVD Recorder
The source tape is of low quality as can be seen in the attached video. -
