I want to convert pgs subtitles embedded in my video to .srt or .ass without actually extracting it from the video. How do I instead make a copy of the video with the converted subtitles?

Not enough information to help constructively however a few assumptions
Is the file a MKV? If so then you can load it into Subtitle Edit and OCR the internal PGS file and save out as SRT or ASS.
You can then add that file to the MKV file by remuxing in MKVToolNix with no change or loss of quality. For other formats there are different solutions, but doable.SONY 75" Full array 200Hz LED TV, Yamaha A1070 amp, Zidoo UHD3000, BeyonWiz PVR V2 (Enigma2 clone), Chromecast, Windows 11 Professional, QNAP NAS TS851
