While I was (mostly) able to recreate VHS effect using only software, what I couldn't do is replicate the audio. Every time i try it tends to sound too sterile.

using only PC software?

Apply lowpass filter around 6..7kHz, peak bass, add noise so overall SNR will be around 42..46dB, clipping and distortions can be results of poor audio capture (analog tape should have no resonance or colorization similar to one in video from link - it sounds like aliasing - but also it can be problem with mixing horizontal sync frequency with sampling rate)

I knew how to do the first two, but I am still confused as to how one could do the aliasing or whatever that effect could be. I tried audacity distort however it sounds like it came from a terrible microphone then. Maybe adobe audition can help?

Not sure if Audition will be any gain over Audacity - you may try to use some filters to 'crush' and distort sound then blend original with distorted in ratio you like.
You can also use for example SoX and 'downsample' filter to efficiently introduce decimation without proper filtering... also you can try to search for some VST plugins - some of them are free and may do distortions you willing to achieve.
