I did a quick search on VideoHelp and haven't found a topic that would list YouTube channels with better than average quality captures. So I am starting one.
- Reely Interesting - generally very high quality conversions from different sources like VHS, SVHS, Hi8, Beta, HDVS. In particular, I like this SVHS demo from Panasonic.
- theleeoverstreet - some interesting and historical TV recordings, like 1991 ABC Prime Time Live - Gorbachev: The Final Hours or 1993 inauguration of Bill Clinton. His latest videos are in 60p, although it seems that he uses a simple line doubler.
- DoctorDothraki has some, in particular the latest PBS - Between The Lions looks pretty good.
- The Vista Group digitizes lots of videos, some look better than others. In particular, it seems that AVDC-100 is not a very good A/D converter (here or here). Their conversions made with AverMedia CE310B look better to me.
- The Media Hoarder collects mostly old ads, news pieces, TV bumpers, although there are some videos on his channel that are not commercials. His later captures are in 60p.
- dellsam34 has some nice captures on his channel.
- lollo - generally high quality conversions with occasional minor defects intentionally left as discussion items.
Feel free to add to this list with the name of the channel, a link and maybe a link to a particular video that you like.

Those are broadcast formats captures, Possibly Betacam SP as it was the most dominant format, I have captures of Betacam, Betacam SP and Digital Betacam, You cannot compare those to VHS, totally different tier of quality.

I have captures of Betacam, Betacam SP and Digital Betacam, You cannot compare those to VHS, totally different tier of quality.
I have several SVHS recordings of a TV show broadcasted in the 2001 at low bitrare/low resolution (so low quality) and then captured with the classic workflow, and a video of the same show from a Digital Betacam captured with a BlackMagic workflow, and unfortunately compressed while captured with h264 codec.
Here the comparison (compressed with h264 to save space for uploading); it's night and day, although analog capture is the raw file without any restoration (a basic deinterlacing and denoise should have been applied for a more fair comparison): compare.mp4
