I'd like to extract the LEFT audio from a stereo file without re-encoding. How can you do this?

If prefer GUI then can try Audacity with FFMPEG.
https://manual.audacityteam.org/man/installing_ffmpeg_for_windows.html
Just drag and drop your movie into Audacity.
Shift+M and select split stereo track
Delete the track you don't need and File -> export. -

I also tried putting the audio file instead of the video and it didn't work.
