Is there a trick to get VidCoder to change the save location? I select the USB drive and folder I want but VidCoder keeps saving to my default Videos folder on drive D.

You have to change the default picker to a custom one. Click on the picker-icon.
In the window that pops up, change the output folder and "save as" a with a convenient name.
Now in the main window select the just created picker.
