How to convert this file to mp4 (for example mp4) to encode also subtitles.
(all converters known to me give the output file without subtitles...)

Looks like those are normals .srt subtitles, so extracting the streams and remuxing them using mp4box should work.

You can use clever FFmpeg-GUI.
Load your mkv, click main, click multiplex, set mp4 as container, click multiplex, done.
Should work.
