i am using M1 Macbook Pro with latest Final Cut Pro, i have many videos in my handycam Sony HDR-xr500e, after copying the media to mac and using them in FCP i cant get Date and Time stamp they were recorded, please help me

You don't copy the media separately, you either import directly from the source, or you do disc image of the source, mount it, and then import directly from the mounted image.
This should give you all the elements that it needs to fully import & recreate the recording, including clip boundaries and spanning across files (if necessary). Probably thumbnails too.
Avchd like bluray & dvd has a very specific structure whose important metadata is not restricted to just the media files. You need this additional metadata to important optimally.
