VFR vs CFR

I'm sure this is basic but I'm definitely new to video. I understand the difference between variable and constant. I read where the iPhone records VFR and would like to know how
important is it to convert to CFR.? I use Filmic pro and Hitfilm to edit,

The best answer is to experiment. Try them and see if they give you much grief.

If you have Filmic Pro on your phone you can shoot CFR from the beginning -- that was part of why it was invented. (I know less about Hitfilm.)
