  1. Using nvidia shadowplay to record my system sounds and my microphone audio on two separate audio tracks. When opening the mp4 in potplayer I can only choose one of the two tracks to play with the video. How do I make it so I can have both playing at the same time????

I don't know of ANY (simultaneous) multitrack players, only multitrack editors. (Note: tracks != channels)
Mix down to a single track if you want them to play simultaneously.

Multiple tracks in end-use clips are usually meant for different languages, or karaoke alternates, etc. where you pick the one appropriate one for your circumstance.

  3. The feature is likely only available in ffmpeg-based players such as mpv: https://forum.videohelp.com/newreply.php?do=newreply&p=2602922

One use case for mixing mutiple audios is when viewing multiple videos sources on screen (also possible with ffmpeg/mpv).

In which case, it would likely be called an editor/compositor, no?

One cannot guarantee sync using that method.
