Using nvidia shadowplay to record my system sounds and my microphone audio on two separate audio tracks. When opening the mp4 in potplayer I can only choose one of the two tracks to play with the video. How do I make it so I can have both playing at the same time????

I don't know of ANY (simultaneous) multitrack players, only multitrack editors. (Note: tracks != channels)
Mix down to a single track if you want them to play simultaneously.
Multiple tracks in end-use clips are usually meant for different languages, or karaoke alternates, etc. where you pick the one appropriate one for your circumstance.

The feature is likely only available in ffmpeg-based players such as mpv: https://forum.videohelp.com/newreply.php?do=newreply&p=2602922
One use case for mixing mutiple audios is when viewing multiple videos sources on screen (also possible with ffmpeg/mpv). -
In which case, it would likely be called an editor/compositor, no?
