I have been using MKV merge for many many years, usually in the older versions like 5.3.0.
What I do is make new mkv files, adding subtitles, and the maximum size is always limited to 8Gb, which is the maximum size a dual sided DVD allows.
Nothing fancy, usually takes about 3 minutes or so to merge it all. Until lately.
Now it's taking like 7 seven minutes to get the files. What might be causing this?
The computer seems to be working fine. Where should I look for eventual bottlenecks?

Ignoring that 5.3.0 is from 2012 and current mkvtoolnix is 51.0.0 and a lot for each supported format and the mkv container version has changed quite a bit that would be the first thing that popped to mind.

Which is the MKVmerge GUI file? Don't tell me it's MKV Toolnix, because that might have been the reason why I stayed with the simpler versions.

I didn't mean for you to try an newer version. I just wanted to note that 8 years is a lot of changes and if this is a mkvmerge issue and not something like a virus scanner, personal firewall or similar causing problems, without more details only you can look through the changes.
(I only use Windows defender, but made sure to add my input and output folders to it's exceptions since it would slow down things here, especially when lots of (or large) files were used.)

You can try looking at the Task Manager, you can find the CPU usage and disk read/write speed.
IN this example, disk 2 is the source file, at 90% utilization (portable drive connected to USB 2, max read speed about 30MB P/S)
Disk 1 is the receiving disk, much slower and the performance is sporadic, probably because it's also
the system disk; you have to take into account the processing within the program - it's not a straight
copy from one to the other - the source has to parsed and split into the separate streams, then recombined
