I can see a palpable difference between 10 bit and 8 pit HEVC encodes. The color looks much better to my eye. Is there any advantage to using 10 bit encoding on monochromatic material?

Likely yes, the same advantage but in Luma only: 10bit vs 8bit.

 Color (YUV420) = Luma (Y, Grayscale) + Chroma (U, V subsampled)
