  1. Please advise/guide what command use defining/restricting Format Setting GOP M, N frames (pic attached) in FFmpeg & after encoding media info will show the GOP M, N frames.

  4. MediaInfo N and M, see for example here:
    https://en.wikipedia.org/wiki/Group_of_pictures

    ffmpeg supports many video codecs. How you set N and M (GOP structure) depends on the syntax of the selected codec. You have to dig into the codec's settings parameters for details.

    Why you set those settings is determined by how you are trying to craft your stream to match your requirements, in terms of quality, bitrate/filesize, complexity, efficiency.
