I have a Plex Media Server at my home which I use to watch movies on tablets in my home wifi network. My TV is also connected to the Internet via Wifi. I live in a house with about 3500 sq feet. I want to upgrade my Wifi Router to get the fastest and best performance out of watching videos and/or TV, avoiding slow downs or dead zones. What is the best Wifi router available today for viewing TV and videos on a home network?

It would be much better if you just had at least one ethernet backbone going from one end of the house to the other, and have two or more wifi routers connected together which can then operate on different channels.

This one looks promising: https://www.buffalo.jp/product/detail/wxr-5950ax12.html sadly to say it is currently available on Japanese market but i would expect soon more similar devices on US and European markets. 8x8 configuration with beamforming may efficiently double real life performance.
In approximation doubling number of antennas will increase your range by 2 - of course using WiFi extenders may improve coverage but usually at a cost of doubling latency and reducing overall throughput by half. -
A much faster/easier alternative than installing ethernet in the walls would be using an ethernet powerline adapter (need 2). Which simply uses your electrical house wiring as a medium to transmit data. They can usually provide between 100Mbit to a 1000Mbit.

Been very happy with tp-link routers. If I need more coverage I run a cable to a 2nd one or do powerline adaptors to 2nd one and set it to access point mode.

Beamforming with 8 antennas can increase range more than twice... and this can be used with ac not only ax STA.
