Which are the latest tools I can use to extract subtitles from a ripped BD?
What formats will I have then to convert to srt?

Use MakeMKV to create a MKV file. Drop this on Subtitle Edit.
This will start OCR (From PGS to amogst others SRT). In case there are more than one subtitle you'll have to chosse the one to use.
Make sure you are using Tesseract 3.02 and have the Language/Dictionary for the subtitles installed. If not use the three dots to install them.
Do the OCR and run Tools ->Fix common erors. Save as SRT.
