I have a kind of audio in a file that is better to be processed with channels combined. If I burn DVD from video files containing mono audio, on playback will devices procees the audio in stereo automatically (so processing the mono channel to both left and right)? I don't remember any case where this was a problem, but I don't have too much experience with a large range of players in this regard. Can it happen that some device will only process it to one channel?
Try StreamFab Downloader and download from Netflix, Amazon, Youtube! Or Try DVDFab and copy Blu-rays! or rip iTunes movies!

Yes, if you burn it as a mono track, not a one channel of a stereo or multichannel track.

If its ac3 1ch audio the player will mirror it to both channels.
if all else fails read the manual
