I like AVIdemux for the speed using NVenc to x265. But I can't find how (if it's possible) to make it copy the subtitles from the original video to the output. I have to re-mux them in with MKVtoolnix.

It may be possible to include external subtitles via Avidemux; but reading subtitles from a source file to "copy" them is probably not supported. Not all subtitle formats from one source container are supported in another target container, and reading subtitles from media files can be more complicated than reading them from separate sources, depending on the format.
BTW, if you use the NVenc encoder, then you don't use the x265 encoder to produce HEVC / H.265 video streams. -
SRT and ASS subtitles are what I use, and if they're in an AVI or MP4 they can also be muxed into MKV.
