Post a MediaInfo report on the file in question to determine if the subtitle is 'soft' ie switchable or burnt in. I f the latter then you can't remove it.

The GUIs may require that you demux all the tracks, the re-mux the ones you want to keep.

Sure you can. Unless the subs that are burnt into the picture. "Hard" subs like that cannot be removed -- at least, not well, and not without advanced filtering and re-encoding.

Check if MP4 have removable subtitles with MediaInfo
subtitles mark as text streams like this:

As we have said post a MediaInfo report ( view text mode in MediaInfo then copy and paste into a post ) that simple act will resolve if the sub is burnt in or removeble

Another mp4 (and mkv) re-muxer is Box4. One advantage it has over some others is that it can re-mux directly from mp4 to mp4. Some others require that you de-mux the source mp4 to elementary streams, then mux the elementary streams to the new mp4.
