  1. There is this old tv that has a video in and an audio in jack. I guess if i have stereo audio with different channel information i will only be getting the one channel if i connect either one of the read and white jack. If i use the stereo to mono converter will i get both merged into one?

Does colour matter or is it indicative? I have an audio cable that has red white jacks on each side. Can i use red on video out and in and white for audio in to connect a device? Im missing a yellow video cable and that can save me a trip to the store

Stereo -> mono RCA connector will give you both channels combined.
You can use red RCA video out to red RCA video in with no problem. The colours are purely for identification.

  3. You might get a little ghosting and additional noise using an audio cable for video.

+1 to that ... the shielding for video has to be much better. Which is why video cable is usually a lot less flexible.
