There is this old tv that has a video in and an audio in jack. I guess if i have stereo audio with different channel information i will only be getting the one channel if i connect either one of the read and white jack. If i use the stereo to mono converter will i get both merged into one?

Does colour matter or is it indicative? I have an audio cable that has red white jacks on each side. Can i use red on video out and in and white for audio in to connect a device? Im missing a yellow video cable and that can save me a trip to the store

Stereo -> mono RCA connector will give you both channels combined.
You can use red RCA video out to red RCA video in with no problem. The colours are purely for identification.

+1 to that ... the shielding for video has to be much better. Which is why video cable is usually a lot less flexible.
