Hello, I was just curious if I convert to a physical or digital format, is there any metadata besides the stuff I can see in Windows by clicking 'properties?' Thanks in advance.

Quite probable. Some encoders (e.g. x264) are known to store their encoding options in the video stream if you don't disable that; see it as a debugging feature.
The "Properties" of Windows Explorer have very limited features. MediaInfo in "full" mode can reveal a bit more.
