Do any of your folks run full off-internet systems, or off-internet hosts with only internet enabled VMs running on top of those hosts?
What's your main strategy and how do you set it up.
Or is it all overkill/unnecessary?
Opinions?

More hassle than it's worth, and functionality too limited. Only a very few high-security systems justify such measures.
I once did a place that had the ROM images to program payout odds for Vegas casino slot machines. Now THAT was fuggin Secure! Server was literally set to self-destruct if ever powered down. But, I could fairly easily have walked out of the building with those ROM images and programming software.
Not a risk I was willing to take, robbing a bank would have been a better career move.
