I have a Canon HV40 that I use a lot. I capture the video from tape to the PC using PP. However, I am wondering, is there a way to capture all the metadata that is on the tape as well? At least it looks to me like there is a lot of metadata there. When I play back the tape on the camcorder the display brings up lots of cool information. But I don't see any of that in my captures.

If the metadata is stored (as aux sectors) within the media stream, then it also transfers to the TS file. This often includes such things as timecode/timestamp. Now, don't expect it to automatically be visible. To access this kind of data, you will need a separate app(s) that specifically recognizes and facilitates those features.
