I have been using Audacity for some time to convert DTS tracks onto Dolby AC3 5.1.
Dolby makes smaller files than DTS and helps me fit my mkv files in the DVD-DLs I always burn to my mkv files.
But there's something missing on wrong on my latest Aucadity install, as it only converts to 1 track, instead of 5.1.
How should I proceed to correct that?

Did you install the ffMPEG library? Here's a refresher for you:

Are you modifying the audio at all or just converting it? Because if it's the latter, using Audacity sounds like it'd be doing it the hard way. Lots of programs should let you convert DTS to AC3 without needing to import it like Audaity does (which takes time). MeGUI's audio encoding section, TAudioConverter, foobar2000 etc.....
For Audacity..... under Import/Export in preferences, is it set to "use custom mix"?
