XMedia Recode - Changing the Ref Frame?

Whenever I convert a file I end up going from 5 Ref frames to 1 Ref frame. I can't work out what a Ref Frame is and equally importantly how to change it?

if you haven't a clue what it is don't go playing with it. try wikipedia to look up reference frame (video)

It's in the Extras settings on the Video tab, "Number of reference frames".
