If i'm editing a video in FCPX to project onto a wall, does it matter what size the video is (not file size, actually video proportion)? If so, what should it depend on? Does the type of projector matter? Does the distance of Projector from wall matter?

It all matters. Generally, the higher resolution the image the better it will handle being enlarged. The practical reality these days is 1920x1080, unless you have access to a DCP system in which case by all means go with 4K. How far the projector needs to be from the wall depends on the length of the lens and the ability to correct for distortion.
