Is there a way to edit a finalized unencrypted -r dvd to remove one of the existing titles but to keep the original menu format (minus the pointer for the deleted title of course)? I think I can copy the thing and delete the unwanted title but I don't know how to save the original menu format.

I would try VobBlanker or PgcEdit, which are free software, but removing the title and deactivating the menu button for it would have to be done manually. DVDReMake and MenuEdit automate the process, but they are paid products.
