I have attached the BDinfo report of my LOTR Bluray.
Can someone let me know why there are multiple, identical, Dolby Digital streams? The same with subtitles.

Just because they have the same channel configuration & bitrate & language setting doesn't mean the contents are identical. Could easily be MAIN, COMMENTARY1, COMMENTARY2, etc.
...Or it could be a quirk in the way BDInfo reports things.

"Chinese" subtitles can be Traditional or Simplified. So you would need two "Chinese" subtitles to cover both.
Some subtitles may have more information that others. For example, if a character speaks in a language other than the soundtrack and this does not happen very often, you might have subtitles only for what that character says. A well known example would be from "Star Wars IV: A New Hope" when Greedo speaks some strange alien language to Han Solo and subtitles would exist only for Greedo's words.
In English sometimes we have special subtitles for "the hard of hearing" which don't just have the spoken words but will also describe what happens in the soundtrack like "Wind blows", "Leaves rustle", "Hears noise from behind", etc.
I've seen subtitle and language descriptions be wrong inside DVDs. I'm sure this can also be done on BluRay. For example, if I am authoring a disc and I want to put a German soundtrack on it, there's nothing to stop me from labeling this as being Japanese either by mistake or deliberately. The soundtrack will still play in German. The internal label is meaningless and is only there to help the person doing the authoring. Since the internal label has nothing to do with any menus on the disc, I could use Japanese to label my German soundtrack but call it "German soundtrack" on the menu and nobody would ever know that I labeled it as Japanese unless they ripped the disc and looked at the contents of the rip.
I have never seen LOTR, but I think it has whatever the BluRay equivalent is of DVD's seemless branching and your subtitle files could be different ones depending on which version of the film you are playing. -
