Can someone please tell me a good but relatively simple video encoding software? I've looked all over the internet for something that has a user friendly interface and is simple to use, but not so simple that it doesn't let me tweak certain things.

Basically, I am looking for a program that will allow me to select the following things...

    Video Container
    Video Codec
    Video Bitrate
Video Resolution (one that I can edit myself, not just something you select from a list)
    Audio Codec
    Audio Bitrate

I've been using MediaCoder up until now, but I noticed that for some reason, all my encoded videos have a slight jitter at the start. it only lasts for about 5 seconds, but it still annoys me.

Oh, and it needs to be free...

Thanks to anyone willing to help. I've been searching for hours and just can't find one that doesn't either have a ridiculous amount of options, or a really unfriendly user interface.

EDIT: Also, I mostly encode to Xvid with AC-3 Audio.

Try this XMedia Recode new version just out, Oh and if you do the HandBrake trick you can use this as a DVD Decrypter.

OK, Xmedia Recode was very close to what I was looking for, but it wouldn't let me convert to AC-3 audio. I should have put that in the opening post, sorry.

    Thanks for the suggestion though.

But you can convert to ac3 just open the movie and for format choose ac3 and it will just convert the audio.

are you sure it only gives you the option of aac because when you highlight the moviefile then go to the audio tab you should have all the other codec options and if you look at the output of the audio slide the slider to the left you should see what the final output of the audio will be.

Well, I just downloaded the older version (the one in the first screenshot) and it did EXACTLY what i wanted it to do, and was easy to use. Thank you so much guys, you have no idea how happy I am. I've been searching for something like this for the last 3-4 hours straight. Thank you! Made my day!
