I am wanting to get a hard drive based DVD recorder that would let me copy to a usb stick to then edit on a pc. Does anyone know a product that does this feature?

Nowadays I suggest using an ' August' brand or similar type of digital tuner stick ( under £20 or (around £50 for HD . I have not tried the HD one) to record directly from the aerial into the computer.
The 'Total Media Software that came with mine records in MPEG Video ( version 2 ) MPEG Audio (version1) in a file which is directly accessible and can be edited in Vegas Studio
In the UK the Panasonic DMR-EX83 appears to meet your needs. I used to use one of its predecessors , record video off the air and then write the file to a DVD and use the disc in the computer. With suitable software you can edit, transcode and do what you like with it. All very expensive and tiresome to use.
The freeview tuner stick is very cheap but do not worry. I really does do exactly what it claims to do -

Do not worry that the set-up is so cheap . It really does do what it promises to do . It is not surprising that the earlier systems are disappearing. -
