This is for Windows 8: when I click on an avi file, I want to be able to click "open with" and have my editor appear in the list there. Right now, the program I like to use (VirtualDub) doesn't appear there. Instead, I have to click "open with", then "Choose default program", and then I can select it, but this also makes it the default program unless I uncheck that option. I have to do this every time I want to edit an avi file.
I tried looking in the registry and I think it's probably related to HKEY-CLASSES_ROOT\.avi\OpenWithProgids which lists the particular programs under "open with". But I haven't been able to get it work by adding values here.

You can use the SendTo option instead. Put a shortcut to VirtualDub in the SendTo list. Search for Shell:SendTo.

You can copy and paste a shortcut for the app(s) you need into your Send to folder if you prefer to do it manually.
C:\Users\(your user profile)\AppData\Roaming\Microsoft\Windows\SendTo
(this is the Win7 location. should be the same in Win8)
I keep a shortcut of my Send to folder on my desktop to quickly add and remove items in it. -
But my "clicky" finger is much more reliable than my "typy" finger
