I realize this question is asked everywhere but they are all ultra specific and thus don't apply. This is a case of too many results from search, so here I am asking again.
All my other video players play the same file and its subtitles just fine.
The "subtitles" menu on right click is of course greyed out.
Is MPCHCx64 even capable of displaying subtitles without additional installations?
What is a good general set of steps to take to try and make subtitles display?

I don't have any MKV files with embedded subs to test. But MPCHC has no problems playing external subs (SRT, etc). Make sure you are using an appropriate video renderer in MPCHC:
View -> Options -> Playback -> Output -> DirectShow Video... should be set to one of the options marked with **
Otherwise you won't see subs. -
I did not in fact, but I did in a second attempt.
No subs, still greyed. But shouldn't they be working either way? The ** marks both options.

I just tried with an ASS sub instead of SRT (made from an SRT with Subtitle Workshop). The subs displayed here. Both as a separate file and embedded in an MKV.
Try extracting the subs with MkvExtract. Open them with Notepad. Do they look ok?
