I am shooting 4 dance recitals which will be delivered mostly in standard DVD mode. I was wondering if there is an advantage in shooting 720P 30FPS vs. 720P 60FPS when downcoverting to DVD?

Shooting 720p60 will give you smoother motion when converted to DVD (assuming you encode 480i30). Watch the video in this post, full screen:

The middle row is what you would see with 30p, the bottom row at 60p or 30i.
