what should I use for ripping DVD to AVI using free software

I have just used DVDfab only too find out it logo's your movie.

what else can I use that wont have logo's and can hard-code the subtitles (or SRT file)

You can hardcode subs (IDX/SUB format extracted from the DVD itself or SRTs you get from somewhere else or create yourself) and create XviD/DivX AVIs from DVDs using AutoGK.
