Can I use my PS2 controller on my PS3 to play PS3 games? I have heard yes, IF I get an adapter. Is this true?

The PS3 controllers connect either through USB (wired), or Bluetooth (wireless). You'll definitely need an adapter. (assuming your PS2 controller uses the standard PS2 controller plug)

I think the adapters may have one on them, instead. Besides, isn't the PS button more for making sure the wireless controllers are registered properly with the PS3?
