Finding most of the encoding help sites out there to be too confusing, I recently authored a blog with a lot of tables/charts to help make the digital converting / transcoding easier to understand for beginners.
Here's a list of basics it covers,
1. The difference between wrappers and codecs.
2. Encoding Quicktimes for web, YouTube, iPad, iPod Touch, iPhone or DVD backup using MPEG Streamclip.
3. Encoding nice-looking WMVs using Microsoft Expression Encoder.
4. Backing up / ripping DVDs to x264 or for Apple products using Handbrake.
Hope this helps:

I'll look into that. I'm not great with CSS, so my web guy will have to do it for me.
